Fried Fish LocoFoodie Style

This fish perked my interest upon seeing it not because of its apparent size but its unique name that which I have forgotten. It starts with letter M and it sounds like Masikaso or Musakaso. I will have to go to SM Hypermarket to end this brooding.

I have got three huge slices with salt that I have fried over vegetable oil and lots of garlic. I garnished it with spring onions and ate it with steamed rice and a bowl of steaming vegetable soup or Laswa.

The Ultimate Ilonggo Vegetable Soup – Laswa

I think I have had enough of canned food lately for breakfast and to end this madness I have made Laswa and I have paired it with fried fish. It turned out to be not only healthy but a very satisfying Saturday morning. I did not miss my chance on rummaging through the busy supermarket even when the crowd was crazy.

Laswa is another Ilonggo delicacy. I remember during my younger years, when we used to live at our old house in Bacolod City, my uncle had a vegetable garden at a nearby  vacant lot. He would plant some okra, eggplant, malunggay, saluyot, alugbati, sili, papaya, sitaw, kalabasa, kamote, tanglad or lemon grass, tomatoes, kulitis or the local spinach and even gabi or taro as we love takway - root tendrils or shoots from gabi or taro that grow sideways.These are the main ingredients of Laswa.

It is a challenge here in Manila to find these vegetables fresh and available. Although I have only used five of the vegetables mentioned due to unavailability it’s still great to have a taste of Laswa after all this time. Laswa is basically just boiled vegetables mixed altogether. It is very easy to make and you will love the healthy greenish sabaw broth that’s good for you.

Ingredients

  1. Alugbati
  2. Malunggay
  3. Talbos ng kamote
  4. saluyot
  5. local spinach or kulitis
  6. green papaya (unripe)
  7. okra
  8. eggplant
  9. squash
  10. takway
  11. shrimp
  12. lemon grass
  13. tomatoes
  14. red onions
  15. salt
  16. water

Instructions

  1. 1. In a pot, bring water to a boil
  2. add tomatoes, shrimps, and onions, simmer for 5 minutes
  3. add squash, takway, and papaya, simmer for 5 minutes
  4. add eggplant simmer for 3 minutes
  5. add all the leafy vegetables and tanglad
  6. add salt -  to taste ( or patis – fish sauce)
  7. serve hot in a bowl
